BRECKENRIDGE — James Beard Award-winning chef Matt Vawter will open a new bakery and cafe called Threefold in Breckenridge this month. The project is a collaboration with longtime friends and fellow chefs Sean and Melissa McGaughey of Healdsburg, California.
Threefold will open in the former Mom’s Baking Company space at 100 N. Main St. in downtown Breckenridge. The bakery will feature house-made sourdough breads, pastries, sandwiches and a curated espresso program.
Vawter, chef and owner of Rootstalk and Radicato in Breckenridge, is the 2024 James Beard Award winner for Best Chef: Mountain. The McGaugheys own Quail & Condor, named one of the best bakeries in the country by the New York Times, and the Michelin-recognized Troubadour Bread & Bistro in Healdsburg.
The name Threefold reflects both the partnership among the three chefs and the technique central to their craft. Vawter and Sean McGaughey first worked together more than 20 years ago at the Cellar in Breckenridge. The trio later reunited as part of the opening team at Mercantile Dining and Provision in Denver before pursuing their own ventures.
Joining the team at Threefold will be Director of Hospitality Patrick Murphy and Chef Cameron Baker, who partner with Vawter at Rootstalk and Radicato and also worked with the trio at Mercantile.
“I have always wanted to open a bakery that could be part of people’s daily lives here in Summit County,” Vawter said. “Threefold allows us to offer the same quality and care you would find at Rootstalk and Radicato, but in a more casual, accessible way. Getting to do this with Sean and Melissa makes it even more special.”
The menu will feature long-fermented sourdough made with freshly milled Colorado grains, classic French pastries including croissants and kouign amann, breakfast options and a lunch selection of sandwiches and salads. The beverage program will include Huckleberry Roasters espresso along with beer, wine and cocktails.
Threefold aims to serve as a morning stop for coffee and pastries, a convenient lunch spot and a community gathering place.
“We have wanted a deeper connection to Breckenridge for years, and the timing felt perfect,” Melissa McGaughey said. “Matt has long envisioned opening a bakery that brings artisanal bread and pastries to the larger mountain community, and we are excited to make it happen together.”
Threefold will be open daily from 7 a.m. to 3 p.m. at 100 N. Main St.
