DENVER — Austin-based restaurant Paperboy has opened its first Colorado location in Denver’s West Highland neighborhood.
The restaurant, located at 3940 W. 32nd Ave., is Paperboy’s third location and first outside Texas. The concept began as a food trailer in Austin in 2015 before opening a permanent location in 2020. A second Austin location opened last year.
Paperboy was founded by Ryan Harms and focuses on breakfast and lunch service. Executive Chef Pat Jackson will lead the Denver kitchen. Business partner Robert Brown, a Denver resident, helped bring the concept to the neighborhood.
“We love this neighborhood because it’s still close to downtown but has its own unique and relaxed vibe,” Brown said. “That sense of connection is something Paperboy has always tried to foster.”
The Denver restaurant occupies a 3,000-square-foot space with 75 indoor seats and a 20-seat patio.
The menu will include items such as chicken and biscuits, Texas hash with pork, sweet potato and egg, and a cornmeal pancake. Other offerings include empanadas, sandwiches and rotating specials featuring seasonal ingredients.
“Cinnamon toast was the breakfast of my childhood, and this is my ode to it,” Jackson said.
The beverage menu will feature coffee, cocktails and nonalcoholic drinks.
Paperboy Denver will be open seven days a week from 8 a.m. to 2 p.m. Monday through Thursday and 8 a.m. to 3 p.m. Friday through Sunday.
