CASTLE ROCK — Starbird Chicken opened its second Colorado restaurant in Castle Rock at 6360 Promenade Parkway.
The fast-casual chicken chain debuted in Colorado with a Denver location and operates 19 restaurants in California, according to the company.
The Castle Rock restaurant donated 10% of opening week sales, up to $2,000, to student programs at Castle View High School and Douglas County High School.
Daniel Wagner, CEO of Whiplash Holdings, said the company plans to expand Starbird’s presence in Colorado following the Denver launch.
“After seeing the excitement and support for Starbird in Denver, we know people here will love our chicken and sandwiches and salads,” Wagner said.
The 2,500-square-foot restaurant includes in-store ordering kiosks, pickup shelves and delivery options through the company’s app and third-party delivery platforms.
The chain said its Denver restaurant has sold more than 40,000 pounds of chicken since opening. Menu items include chicken salads, tenders, sandwiches, nuggets and wings.
Starbird was founded in the Bay Area in 2016 by chef Aaron Noveshen and restaurant innovation agency The Culinary Edge.
The Castle Rock location will host a grand opening event April 27 from 5 p.m. to 9 p.m. featuring a ribbon-cutting ceremony, free entrees and beverages for attendees and family activities.
