Roths Sea & Steak to bring fine dining to Colorado Springs

COLORADO SPRINGS, Colo. — A new fine dining restaurant overlooking the will debut in Colorado Springs in November. , created by entertainment company VENU, will offer year-round dining with mountain views, stage-side seating and a menu blending global influences with high-end hospitality.

The restaurant will be led by Executive Chef Ricky Biswas and General Manager Jeroen Erens, both veterans of the fine dining world. Biswas trained under acclaimed French chef Franck Putelat and staged at The French Laundry, Coi and PRESS. Erens, a Netherlands native, has worked in Michelin-starred restaurants, led food and beverage programs and served as export director for Austrian winery Domäne Wachau.

The menu will feature dishes such as Tomahawk steak, A5 wagyu tartare, Mediterranean-inspired sea bass, whole roasted turbot presented tableside, veal Wellington and the signature “Potatoes from Heaven.” Seasonal ingredients and premium seafood will drive the menu’s rotation throughout the year.

Roth’s beverage program will include cocktails based on classic recipes, rare whiskies such as Pappy Van Winkle and The Macallan, and a wine list emphasizing family-owned estates. The restaurant will also debut a Napa Valley blend as the first release in its exclusive Roth’s Cellar Selection series. Colorado craft beers will round out the offerings.

For guests seeking more, Roth’s will offer Brohan’s, a rooftop cocktail lounge with amphitheater views, and the Chef’s Counter, an eight-seat exhibition kitchen experience with a seven-course tasting menu paired with rare wines.

J.W. Roth, founder and CEO of VENU, described the project as a tribute to his family’s passion for food and hospitality. “With unmatched service and attention to detail, Roth’s Sea & Steak will set a new standard for luxury dining in Colorado Springs,” he said.

Located at 13010 Spectrum Sun View, the restaurant will serve dinner Sunday through Thursday and stay open until midnight on Fridays and Saturdays. Valet and complimentary parking will be available. Reservations will open 30 days prior to launch.
