DENVER — Chef Quincy Cherrett has opened his first brick-and-mortar restaurant, Madeline, in the former Fruition space at 1313 E. Sixth Ave.
The restaurant is named after Cherrett’s newborn niece and is designed as a family-run neighborhood restaurant focused on American cuisine with Thai and Japanese influences. Cherrett’s sister helped lead project management and marketing efforts while his father, a longtime hotelier, contributed to the project.
“Madeline is really a culmination of everything that’s shaped me,” Cherrett said. “It comes from a deep love and respect for food, family and hospitality.”
The menu includes oysters with radish and green apple mignonette, beet carpaccio with Thai red curry peanut sauce, lamb agnolotti with spring pea and morel mushrooms, and halibut with green curry and black forbidden rice. Desserts include black sesame cheesecake and passion fruit crème brûlée.
Bryan Trott, formerly of Brasserie Brixton, Alma Fonda Fina and Cimera at the Source Hotel, will serve as general manager.
The beverage program includes wines from Fruition’s existing cellar along with new selections and cocktails such as the Sumu Punch and Beck & Call.
The restaurant was designed by Kevin Nguyen of REGULAR Architecture, with construction by NOVUM Contracting Group. Artist Lena Dechamps created custom murals for the space.
“Taking on a space as iconic as Fruition was both an honor and a responsibility,” Nguyen said. “We wanted this new chapter to feel unique and fresh while still incorporating elements that were already in great shape.”
