Wellness Counter to open May 7 on Boulder’s Pearl Street

— Wellness Counter, a and tasting concept from co-owners Phoebe Lee and Steven Lee, will open May 7 at 1117 Pearl St., the owners said.

The restaurant is a new venture from the team behind , a plant-based Japanese restaurant in Denver. Wellness Counter will focus on and traditional Japanese techniques, with an open counter format that allows guests to observe food preparation.

“The philosophy we developed through Wellness Sushi felt bigger than the format itself,” Phoebe Lee said. “Wellness Counter came from that, not to replace what we built, but to expand how we express it.”

The menu will include nigiri, hand rolls and small plates, along with dishes such as robata grill items and claypot rice. The restaurant will also feature a beverage program centered on tea, coffee, sake and cocktails.

“For me, it’s always been about repetition,” Steven Lee said. “Understanding the nature of the fish, how it changes and how each step affects the final result.”

Wellness Counter will be open daily, with lunch and dinner service Monday through Thursday, extended hours Friday and Saturday and Sunday hours until 9 p.m.
