Mary Nguyen is a pioneering chef, entrepreneur and whose career has transformed Denver’s culinary landscape and opened doors for countless others. As one of North America’s first female executive sushi chefs, Mary broke barriers in a male-dominated field before launching in 2013. Today, her Olive & Finch Collective includes multiple restaurants, a wholesale grab-and-go line and a company that brings high-quality food and ethical business practices to Denver’s most iconic locations.

Mary’s innovative approach has reshaped how restaurants care for their people. From the beginning, she made full medical benefits, and retirement plans nonnegotiable. Her people-first model has built a culture of loyalty and excellence where employees feel valued and have clear paths to grow. Today, 75% of Olive & Finch’s senior management team are women, reflecting her commitment to mentorship and equitable advancement.

Over the past year, Mary’s vision continued to expand. She opened a new Union Station location, launched Olive & Finch On the Fly at Denver International Airport and prepared for new sites at the Performing Arts Complex and DIA. Her leadership earned her recognition as 5280’s Best Chef in Denver and a Girl Scouts of Colorado Woman of Distinction.

Beyond the kitchen, Mary’s impact is equally profound. She chairs the Asian Chamber Foundation, serves on the Colorado Asian Chamber board and champions women through mentorship with Asian Girls Ignite and Work Options for Women. Through every venture, Mary proves that when businesses invest in people and purpose, entire communities thrive.
